A side project by Yann who has wanted to make a majority Riesling pet nat for some time, but never had enough fruit after making his terroir wines. Grapes were purposely picked early for higher acidity. This is zesty, delicately saline a wine that should be drunk cold on long, hot evenings with a bag of crisps, dips, and some olives.
