A smooth yet lively Volnay with a lot going on. The wine was produced by Catharina Sadde, a young winemaker with one of the most impressive CVs in Burgundy, including a stint at Domaine de la Romanée Conti – who here uses 100% whole cluster berries, ambient yeast in fermentation barrels and stainless steel tanks, followed by 12 months maturation in barrels, and minimum SO2 added only after malolactic fermentation or before bottling. Juicy acidity and aromatic complexity making for an impressive but highly drinkable Pinot.
