Ethereal and delicate Pinot with a label that pays tribute to Marcel Proust’s first book, from vines in two plots – Les Vermots and the tiny Premier Cru plot of Les Peuillets. The wine was produced by Catharina Sadde, a young winemaker with one of the most impressive CVs in Burgundy, including a stint at Domaine de la Romanée Conti – who here ferments a mixture of whole cluster and destemmed berries with indigenous yeasts in barrels and stainless steel tanks, followed by 12 months maturation in used barrels, and minimum SO2 added only after malolactic fermentation or before bottling. Stunning purity of fruit, but also plenty of peppery length that lingers on the finish.
