Behind the upper crust of established natural winemakers in the Alsace there’s a new generation of vignerons honing their craft. Many of whom have embraced Sylvaner thanks to its high acidity, herbal-tinged fruit and mineral complexity. For “Mafia Vin Free”, winemaker Emilien Revers pressed the grapes directly, blending it together with Gewürztraminer (50/50), resulting in a pet nat full of vitality, captivating aromatics and a rounder texture. A cracking complement alongside soft-shell crab tempura, or a humble fish n’ chips!
