Situated amongst the dense forests of the region, Conestabile della Staffa’s vineyard is home to wild animals, flora and fauna. Wild boars need a special mention here - who are quite the nuisance, sometimes destroying whole vintages for winemakers. Although winemaker Danilo insists that we must remember that it was their home before the vines. Paying homage to the wild boar, this spritzy rosato is a true symbol of the health of the land, and celebration of the richness of mother nature. A true capture of terroir, this rusty pink Rosato shows redcurrants and juicy hedge fruits, with a slight spritz and a dry finish. Quite transportive - it’s got aperitivo written all over it. This rosato was made from Sangiovese and goes best with light snacks like oysters, salumi, bresaola, but will also work well with good guanciale carbonara or vongole. This wine should be chilled.
