Juicy and spicy, with ample savoury depth in this blend of Pinot Noir from Beaune and Gamay from Pommard and Fleurie. The wine was produced by Catharina Sadde, a young winemaker with one of the most impressive CVs in Burgundy, including a stint at Domaine de la Romanée Conti – who here uses a mixture of whole cluster and destemmed berries, ambient yeast fermentation in wooden vats, and 12 months ageing in used barrels, with minimum SO2 added only after malolactic fermentation or before bottling. A rich mouthfeel that’s bursting with red and black berries alongside spice and herbs.
