Wild and vibrant medium-bodied blend of red and white grapes from Auvergne’s premier vigneron couple, Patrick Bouju & Justine Loiseau! Seductively aromatic and juicy with notes of crunchy red berry fruits, bramble, violets, a touch of VA and fine tannins. Harvested by hand from 20-85 year old vines from their plots in Auvergne and Beaujolais, as well as from trusted winegrowers in Languedoc and the Loire, the grapes were partially destemmed before undergoing 10 days of carbonic maceration and a week of spontaneous fermentation with indigenous yeasts in fibreglass. After a gentle press, it was left to rest for 9 months in inox before being bottled unfined/unfiltered and without added sulphur. Best paired with thin-sliced saucisson d’Auvergne and soft-rind cheeses!
