‘Wildman Blanc’ is an aromatic rollercoaster ride of an orange wine, courtesy of Adelaide Hills pioneer, Anton van Klopper. Charmingly bold like the man himself, this dry blend of Sauvignon Blanc (95%) and Pedro Ximenez (5%) comes with heady aromatics of citrus zest, tropical fruits and sweet tobacco. Textured and beautifully balanced on the palate with the help of savoury tannins and a good lick of acidity to boot. Cultivated organically and hand-harvested at a farm in Barossa Valley, the grapes underwent 4 weeks of carbonic fermentation and maceration in whole bunches before pressing and assembling in stainless steel in the winter. Bottled unfined, unfiltered and without any added SO2. If Pouilly-Fumé has a boisterous cousin ‘Down-Under’ – Wildman is his name!
