Taste & Terroir: With most of his vineyards destroyed in 2018 and a bountiful harvest in the Cinsault parcel, Axel decided to create a number of one-off cuvees, picking through the vineyard several times and differing the lengths of macerations. This is the third pass through the vineyard and arguably the most age-worthy of the three Cinsaults. It sees a 12-day maceration being pressed off into fiberglass.
