A skinsy, biodynamic white made from 100% Spergola, an ancient grape variety indigenous to Emilia-Romagna. Expect aromas of white stone fruits, lemon peel and nutty accents. The palate is dry, refreshing and beautifully textured with preserved lemons, apple compote, honeysuckle and with a pleasing tail note of sour bitters. Harvested by hand, the grapes underwent a cold maceration, soft press and fermentation in concrete tanks, including three days skin-contact. Bottled unfined, unfiltered and with minimal additions of sulphur.
