Mixing his full-bodied, herbaceous crop with the more delicate, mineral Viognier of neighbours Gérald and Jocelyn Oustric, I can see You from the other side of the Valley is truly an act of diplomacy. Pressed slowly over four days, the resulting white is all the best of its parts – floral and fruity with the perfect amount of fizz.
