The wine is basket-pressed whole-bunch, undergoing a two week maceration before a year of ageing in old barrels and bottling via gravity with no filtration, fining, or additional sulphites. Elegant and ethereal but with insatiable energy, and a complex, deep aroma profile offering darker berries and cherries, sous-bois and floral hints.
