We had the first, and so it’s a real pleasure to receive the second release of the Ham Street wines. This has a heightened elegance, and it straddles one our favourite pantones of gushing pink, and bright ruby red depending on where you look at it from. All grapes hand harvested from four hectares at Ham Street. Half of the Pinot Noir was macerated as whole bunches, the other half as a de-stemmed semi-carbonic maceration for two months. Chardonnay had a 5 day maceration on the skins. Aged in amphora for seven months before being topped up with 60 Litres of their pet nat, what’s not to like?
