Expressive and thirst-quenching with notes of green orchard fruits, toast, proofing dough, almond and a fine, cleansing acidity on the finish. Here, Patrick’s prowess as a master blender is on full display, adding balance and aromatic complexity to the blend with grapes (Pinot Blanc, Pinot Gris, Riesling) taken from Domaine Goepp in the Alsace. After hand-harvest and initial spontaneous fermentation in stainless steel, the wine finishes fermentation in bottle without seeing any fining/filtering processes, or added SO2 at all.
