Impressively walks a fine line between reductive tension and oxidative richness. The wine is an equal blend of Chardonnay and Sauvignon Blanc from the highest and steepest plots on the estate, which spend a few days on the skins, before fermentation in wooden vats, and 24 months ageing in the same vessels, and bottling without filtration, fining, or added sulphites. Mouthwatering acids, saline minerals, with nutty and tropical flavours, and aromas of green apple, pineapple and bread yeast.
