A bright, textured and saline blend of direct-press Chardonnay, Savagnin and several ancient indigenous varieties all from the same parcel. This Jura show-stopper offer complex, evolving layers of bruised orchard fruit, quince, spice, almond and gunflint reduction on the nose, carried over on the palate by a taut, electric acidity. A wonderful complement to hard cheeses and Comté in particular, as well as roasted chicken and vegetables. Fermentation and ageing took place in old barrels for almost two years before bottling. One of winemaker Raphael Monnier’s finest if you ask us!
