A fresh and invigorating co-ferment of direct-press Carignan and whole bunch Grenache from biodynamic plots in Vaucluse and vinified by Jura vigneron, Alice Bouvot. Vibrantly pale ruby in the glass with wild aromas of red summer berries and violets, leading to a lifted palate of crunchy red cherry, bitter herbs, trapped CO2 and fine tannins to boot. Whole bunch infusions of Grenache and pressing are followed by élévage in cuve until the following Spring, before being bottled unfined and unfiltered with miniscule additions of sulphur. Elegant, aromatically lifted and bursting of that captivating Jurassic energy only Alice knows how to capture! Best paired with sunny vibes and a slab of saucisson du Jura!
