Stunning, ethereal Pinot Noir from a cool, late-ripening Premier Cru site. The wine was produced by Catharina Sadde, a young winemaker with one of the most impressive CVs in Burgundy, including a stint at Domaine de la Romanée Conti – who uses a mix of whole cluster and destemmed berries, ambient yeast fermentation in a mixture of barrels and stainless steel tanks, followed by 14 months in barrels, and minimum SO2 added only after malolactic fermentation or before bottling. Savoury and floral and with a weightless mouthfeel, this is a seriously sophisticated Pinot.
