Cossard works his magic with fruit from one of the most celebrated villages in Burgundy. Production now takes place in a mixture of concrete eggs, earthenware jars and Georgian qvevris, and given a long élevage, before bottling without filtration, fining or added SO2. This will certainly benefit from age, but it's already brimming with energy and vitality.
