Les Dolomies ‘La Cabane’ 2023
A Pinot showing the wilder side of Jura reds, with lifted brambly fruit, tart cherry skin, and earthy forest floor aromatics. Grapes are destemmed by hand, then given a three-week maceration with spontaneous fermentation before ageing neutral barrels. No sulphur is added at any stage. Rustic yet vibrant, with a cool-climate crunch and a distinctly alpine edge that evolves beautifully with air.
