Taste & Terroir: The first time we met Axel we were treated to a lunch in this vineyard – pork loin cooked over dead vines with wild asparagus foraged from around the vines – it holds a very special place in our hearts! The parcel is high up in the hills north of Beziers, with large limestone rocks making up the ground from which the vines grow. The grapes are kept in whole bunches for 10 days before being pressed and raised in stainless steel. Rich and layered, this will only get better given time in the cellar.
