Velvety and lively but precise Gevrey from 50-year-old vines in the southern side of the appellation. The wine was produced by Catharina Sadde, a young winemaker with one of the most impressive CVs in Burgundy, including a stint at Domaine de la Romanée Conti – who uses a mix of whole cluster and destemmed berries, ambient yeast fermentation in barrels and stainless steel tanks, followed by 12 months ageing in barrels, and minimum SO2 added only after malolactic fermentation or before bottling. Bursting with aromas of ripe berries, orange peel, peonies and forest floor, and boasting a finish that lingers for eternity.
