The savoury orange Metamorphilka, long maceration, this one’s for the foodies. High altitude 80-year-old Macabeu vines, white clay/calcareous soil with a lot of quartz and stone. 70% of the grapes are destemmed and passed to large amphora with their skins.
30% of the bunches are placed whole in amphora. Bottled in ceramic (with wax seal) as they were aged in amphora. If cooking try some weightier white seafood like monk fish or skate, also great with meat.
