Layered and finessed with tangy acidity and an extended, saline finish. To produce the wine, a third of the Aligoté grapes were destemmed and macerated on the skins for five days, with the rest directly pressed as whole clusters in a basket press, undergoing fermentation with indigenous yeasts, followed by six months of ageing in 350L used oak barrels, and bottling with a tiny amount of sulphur added. So much to enjoy here, from the enticing aromas of green orchard fruit, freshly baked bread and white flowers, to the purity and intensity on the chiselled palate.
