Skin-macerated blend of Altesse and Chardonnay (80/20) with organic grapes taken from the slopes of Haute-Savoie and vinified by household Auvergne-vignerons, Patrick Bouju & Justine Loiseau. Fresh and beautifully textured on the palette with evolving notes of pithy citrus, apple compote and almonds, all kept in check with moreishly bitter tannins and a good lick of acidity on the finish. While retaining high drinkability and tension, this amber beauty keeps evolving in the glass and gains in complexity with time. Harvested by hand and spontaneously fermented, the grapes spent 21 days macerating on its skins before pressing and élévage in old barrels. Bottled unfined, unfiltered and without added SO2.
