1. Volcanico Pais
Volcanico Pais comes from a very old vine (100 years and more) grown on volcanic soil. Hand harvested, fermentation starts spontaneously with native yeast, Malolactic fermentation occurs naturally. It is fermented and aged in concrete vats, the extraction is very subtle. The skins are basket pressed. The wine is then aged in large wood vessels and after 14 months is bottled with a very coarse filtration. The delicate underbrush aromas of Itatas wild grass, red fruits and a little bit of cassis are aromas and flavours that characterise this wine. A fresh wine, delicate, marked by fine grain tannins that give a very unique structure and create a long lingering finish with a distinctive mineral character due to the volcanic soils where the old vines thrive.
2. UBE Miraflores
A fresh, savoury wine, the UBE Miraflores is a beautiful introduction to the terroirs of Sanlúcar de Barrameda. This winegrowing region is renowned for its chalky albariza soils and coastal setting, which impart a brightness and salinity onto wines produced here. Made in a ‘sherry-like’ style, this wine is aged under flor but is not fortified, with a focus of fruit character. The resulting wine is fresh and easy to drink. The nose gives intense floral aromas, with notes of very ripe white fruit and fresh yeast. The mouth is zesty with citrus, orchard fruit and a saline edge typical of the area.
