Dom Thierry Ruinart was a monk in 1657-1709, and a friend of Louis XIV. He discovered ‘wine with bubbles’ after taking a pilgrimage from his home Champagne to the Abbey of Saint-Germain-des-Prés, near Paris, where the local aristocracy were enjoying it, immensely. This experience had such a profound effect on him it meant that throughout his life he became a huge advocate for ‘wine with bubbles’. So much so, twenty years after his death his nephew set up the very first house of Champagne in his hometown, and something, eternal was born. One could say that Ruinart’s invention is bottled in these 3 special magnums we’ve managed to get our hands on. Gold in colour, delicate, white fruited. Have as aperitif, or with scallops or young cheese.
