A fresh and fruity sparkling wine with low alcohol, light sweetness and a delicious refreshing taste. Ideal as an aperitif. The terroir is a complex mosaic of soil types, principally clay-limestone with some stones, and sand and silt in some areas. The limestone in this part of the South-West of France is called ‘Molasses’, which is a soft stone, made from limestone and which containing organic matter such as fossils of pre-historic sea creatures and shellfish.

Mostly Procanico and Malvasia, with a little Roscetto, Verdello, Petino and Romanesco in the mix too. As always there is just a little skin contact, before a short ageing in vat. A cloudy, vibrant white wine with just the right amount of citrus and spice.

Nebbiolo from their younger and less exposed vines, which produce less concentrated fruit. This just spent five days on the skins, roughly half as whole bunches, before being pressed off to cuve for just a couple of months. The wine was bottled just a few months after the harvest, retaining a beautiful vibrancy. With just a hint of tannin, this light, bright and easy take on the grape is just the thing for your next barbecue.
