A briney, summer fruited, sulphite free pet nat made in Kent! Pinot Noir was gently foot stomped. The Gris and Bacchus were macerated overnight before being added to the Noir to ferment in steel. Aged for about three months in combination of amphora and tank. Bottled in spring with a little reserve-juice from the first press to help fermentation continue in bottle. Not disgorged so have your glass firmly ready by your side!
