Vines from an ultra steep gradient. A wine for the real geeks, from the nuanced ‘Ex Vero’ series by Wertlisch: a study of Chardonnay and Sauvignon Blanc grown at different altitudes: These grapes were grown in the middle part of the slopes at 35-70% gradient. The topsoil is highly calcareous as opposed to the brown clay you’d find further down the hill. Bottles with a little residual sugar as fermentation was quite slow and Ewalk wanted to get bottling. Think Alpine roses with a lick of tight acid, and a gentle sanity.
