Yann usually saves his Sylvaner for his wine ‘Edelzwicker’. But thanks to using negoce fruit in 2021 it’s allowed him to make a terroir cuvee. The fruit is grown on old vines bedded into sandy clay. Once picked they’re gently pressed over 6 hours and fermented in tank, aged in large barrel for 6 months with no added sulphur at bottling.
