Nephew of legend Pierre Overnoy, Guillaume works with organic Pinot Noir harvested from 8 to 30 year old vines grown on light-coloured marl and clay. The grapes are ‘cribbled’, a signature domaine process where bunches of grapes are rubbed over wooden trays before going into Burgundian barrels for a year. Expect ripe red fruit, raspberries, cherries and subtle floral notes such as roses.
