Teacher by day, winemaker by night Côme produces tiny amounts of incredible wine in a cellar under a chateau in Saumer that was once a mushroom factory. He notes Eric Dubois at Clos Cristal and Christian Tschida as mentors. Grapes were hand harvested, no pumping the juice, a nice slow fermentation due to the coolness of the caves where the barrels are kept. It’s made up of just the free run juice, making for an extremely delicate and bright red wine.
