Vincent crafts a Pet Nat using the Sémillon usually destined for his family's sweet wine Monbazillac, which we were originally introduced to by sommelier Dominic Smith of The Clove Club. This is certainly a wine you can celebrate the encore of warmer weather with.
Food Pairing: Aperitif wine so not 100% necessary for food. But if so, oysters, ceviche and maybe some sardines in olive oil and lemon.
